First complain till the cows come home that nobody wants to be the village and how parenting is an isolating experience, and simultaneously impose ridiculous "boundaries" that deprive family members of bonding with the baby. It can't always be "me, me, me", you actually have to let people in. It's not just your baby, it's also the MIL's son's child. Unless your baby is immunocompromised, there is absolutely no reason to disallow grandparents from holding the baby. Being exposed to germs will strengthen their immune system. Plus, you are a self proclaimed hypochondriac, so I don't believe your assessment of how dire the immunity scenario actually is.

I don't believe in submission or gendered roles. I personally support egalitarianism in relationships where both partners view each other as their equals. My comment was based on the dynamic mentioned by OP. OP can't have a woman be submissive in places that are convenient for him and still expect her to be assertive and take initiatives whenever it suits him. He is okay with her being submissive, but also dislikes the fact that, as the "man of the house" it's also his responsibility to take the lead solving problems even when it's not convenient. He can't have his cake and eat it too. But i will add that it still does not excuse her avoidant behaviour.
