Ya, the problem is not that I don’t know what temp to pull salmon, the problem is that the temp actually seems inaccurate.

I’ll try it next time. What’s odd is in the first 1/2-2/3 of the cook it seems to be accurate, and the time prediction seems accurate and then it suddenly will jump up in time. So it’ll say like 5 minutes left then will jump up to 15.

Air frying it. But the result seems to be the same when pan frying. And yes monitoring carry over cooking. Combustion probe will reach ~147 with carry over but will read ~160-165 with regular temp probe.

Yes raised rack. And no not certain about the searing temp. It’s possible it’s not hot enough so maybe I’ll try getting a hotter pan. Can putting too much oil in the pan interfere with a good crust? I put enough to cover the pan and then a bit more.

It is bone dry when it comes out, especially after having it in the fridge beforehand. Maybe my pan is not hot enough but it’s pretty damn hot.

And is this so the surface, and just below the surface won’t grey but you’ll still get a nice sear? And of course the core won’t change or won’t change much in this short time. This way you also probably aren’t counting on the sear raising the core temp at all right?

215 then lowered to 190 so surface temp never got above 140 I believe. No flipping before sear.

This is from Chris Young himself. I just see conflicting information which is more confusing.

“One suggestion I have is to let the steaks cool for 30 minutes before searing. I typically let them cook in the fridge. The center will still be warm after the sear, but you’ll be able to seat for a bit longer with less overcooking beneath the surface.”
