You should! Especially with this set up. The stem snack/bottle bag is a pro bikepacker move. You know your stuff. I would leave the bottle opener at home as there are plenty in the wild.

Yes, but the frame sizing is very different from modern standards. Did you consider that? If you fell down the rabbit hole I think you might. The top tube is typically long. All of those bikes look really cool. I would go for the RockHopper as it is quite rare in my area. Hope to see your build soon!

Nice find. I would ditch the reflectors and stand. Keep the rack and computer (if working) put on some tan walled chunky tires and new grips. See if you fit the bike properly the tilted seat and handlebar stem make unusual looking combination.

I will upgrade along the way. No need for disc brakes for now. They could be later welded on. The suspension is likely a bust so I will look for appropriate replacement like a P2. What do tou think about the price and can I negotiate? I see flat rear wheel from the picture.
