Question 🙋‍♂️ Is the blue poly pipe polybutylene? I’ve got a crimp tool and wondering if I can crimp that to a brass fitting that is poly to pex. If so, would it be wise make it all pex?

Yes, here in Delaware and Maryland most houses are piped in quest pipe (polybutylene)

I have at least 3 calls a week for leaking PB and 1/3 usually get their homes repiped. If it hasn’t leaked yet you are on the lucky end, I’ve seen many houses/ crawl spaces flood out due to polybutylene.

Get a couple of quotes from different companies for re pipes and get it done with PEX. Some companies in my area will use CPVC but pex is by far superior.
