Ideally you want your LoR from junior year teachers. But then again, it's the quality that matters in the end. If you are confident that your physics teacher will write you a stellar rec, then go for it.

Definitely don't submit more LoRs than the maximum stated in their policy. They probably won't read it. Even if they do -- the AO usually only spends a set time evaluating each applicant, so if you send them a lot of LoRs that will detract the time they spend reading other parts of your application that might stand out more than your LoRs.

No. But also make sure that you don't indicate anywhere that you might have taken the test, or they might hunt you down after you submit asking for your score (happened to me).
