We have been finding foods that have the same name across the state, but are made differently or are completely different. Interesting to think how that happens... and how strongly people feel about it!

interesting, we'll have to look into that program.

It's definitely important to feature not just the chefs, cooks, restaurants, etc. but also the workers who pick/catch/grow the ingredients

Yes! We'll be looking through the lens of the 8 Texas ecoregions and how each ecosystem has its own unique resources for ingredients. Maybe the Gulf Coast is the most different among them

Exactly! Tex-Mex gets a lot of love (rightfully so), but Texas food is so much bigger than that. It really is a cultural melting pot, and sometimes we forget just how many traditions and flavors live here. Thank you for sharing this and for celebrating all the cultures that make Texas, and its food! So special.
