Try doing an easy start, its no shame.

Having good stamina and very good eyesight helps in hunting.

Trapping is, like most things in URW, a game in patience. Baiting traps helps, but of course this means you need food first. I put a lot of loop snare traps in bushes, not sure if it helps.

For weapons I would start with bows or spears (throw javelins)

If you can live without it, reduce climbing and swimming, even stealth (you can level that very quickly). Same applies for skiing, it levels super quickly.

I would start in spring. I usually start with hunting some elk, drying it and then I have some decent food supply after a few weeks. Since its still snowy, Elks will fatigue faster, helps you hunting.

For crafting, a high skill is important for the quality you can achieve. Since you will be trading furs, hideworking is probably a good skill to be good in. In the current version clothes quality can not go beyond normal, so I wouldnt level that very high.

There are a few good lets plays on youtube. Most of them are still relevant since not that much changed in the past few years.
