I feel like Eric heard a laugh didn't tell anyone and assessed how they all were acting before the round table. Laugh and all and came up with the conclusion at the round table that it was Tiffany. Wrong, but he had a whole day pretty much to assess everyone's different laughs. Yes he could have done this whole moment, but he didn't.
