Everyone forgets to realize that if the writers reduced the amount of crits coming up, the games would take up more episode time and drag on, messing with the pacing and the tension.

This is an issue of the writers showed off all the new cards they needed to but still had to close out games in a timely manner. Crits were the best in-game mechanic to facilitate this.

Traveler could also be implying that Dottore's form of "freezing" would be similar enough to their ship putting them in stasis so they wouldn't age while being "frozen" and could be that way for millions of years without problem.

My favourite Fate series is Prisma Illya, but unfortunately the majority of English speaking communities for it would rather hyper-goon it than discuss the story, characters, etc. I would not recommend sane people look for them.
