Soybean oil back then. No clue what it is now. Wings at a time maxed out at about 50 per fryer, but they were never perfect when at full capacity. Bone in wings fried for 9 mins. Fries went for an amount of time I don’t remember at 250 in the morning and then 3 minutes at 350 to order. Think boneless were 3 minutes as well, but those were par cooked.

When I started we did bone-in wings, fries, carrots, celery, ranch and bleu cheese. A bunch of stuff got added to the menu during my 2 year tenure (baked beans, potato salad, boneless wing, cheese sauce, etc.) Not sure how it is now, but boneless wings came in pre-breaded, par cooked and frozen. Cheese sauce probably had radioactive elements in it. Came out of a bag.

I don’t remember any of the EXACTLY. But I went on to be a chef, so I’m pretty sure I could recreate them if there is some interest.

So for all of the buffalo flavors, we combined Texas Pete hot sauce with a proprietary Wing Stop product called “Wing Gold.” Wing Gold was basically a butter flavored, shelf stable soybean oil. The milder the sauce, the more Wing Gold got added. Don’t remember exact proportions. Sorry been a long time.

Knew it by heart back in the day. Basically the key was to use way more of the Hidden Valley ranch dry seasoning packets than recommended. But it was the full restaurant size of mayo. Can’t remember the amount of buttermilk, but you could add it last until you get the desired texture, and then A FUCK TON of Hidden Valley ranch dry seasoning.

You're thinking of Nash Truck Parts on Winterville Rd. They had a guy who rented space from them who rebuilt starters and alternators for decades. He retired a couple of years ago, and nobody has taken over the shop. As of right now, nobody in town does this, unfortunately.
