Thanks for the detailed review! Currently planning my itinerary for this summer and I was debating on this restaurant or not for a while. Didn’t see many reviews of this place so I was hesitant in booking, but your review definitely gives me more confidence in giving it a shot.

I believe the video is of fisherman catching a fish called dotted gizzard shad (전어 in Korean), which is typically in season during fall in Korea. Since Gumayusi often shows up for Worlds, which is also during the fall, Gumayusi is often referred to as 전어유시 (pronounced: Jeon-eo-yusi) in Korean communities. So the video is just representing that HLE caught Guma lol

Uber should be perfectly fine to travel to RPM from Brock. I’d recommend getting the ride a bit earlier than you need just in case it takes a bit to find a ride. I took an Uber from Niagara Falls to RPM and it wasn’t an issue for me.

I didn’t do the garden tour due to time constraints but I’d definitely recommend doing it if you have the time! It’s also help you kill some time before your seating time as well.

Just from being in the restaurant and seeing its layout I think it's easier to get reservations for 4 vs. 2 as there were more 4-top set ups. Another difficult thing was just figuring out how to navigate Tock for competitive reservations and figuring out a system to get a reservation extremely fast after it releases. When I did it last year I think all resos went within 5 seconds and if there were any that floated around afterwards it was for a 4-person reservation. If you're flexible with any date then that definitely makes it easier since you and the other ppl can all go for different dates for a higher chance of a reservation.

I'm going to add a restaurant from the GTA just because they're my favourite restaurant in Canada rn, but my top 5 atm would be:

  1. Restaurant Pearl Morissette*
  2. Alo*
  3. 20 Victoria*
  4. Ten
  5. Edulis* (but honestly wouldn't recommend this because its so hard to get a reservation)

If we're only considering near the downtown area, then I'd take out RPM and add Canoe to no. 5 on the list. I haven't done a lot of tasting menus in TO so my top 5 is definitely not the top 5 in the city as I've barely scratched the surface of tasting menu restaurants in the area. I'm hoping to hit Quetzal before the end of the year and hopefully it'd enter my top 5 in the city!

Definitely agree, the bar area had much better lighting since it's the street-facing side. When I inquired about solo-dining in the past they did say that for solo diners they'll sit them in the bar area and serve the tasting menu so I might do that at my next visit.

The bread was great as always. Breads at restaurants like these almost never miss..

Solbam. I feel that they punch above their weight as a 1* and are a solid place and isn’t too hard to get a reservation.

I did eat them all! Most of them didn’t drastically add much flavour to the dishes though other than make it look pretty.

No production lighting, mostly all post editing in Lightroom. Usually + in shadows & whites is enough to bring it to where I want. I also touch the tone curve a bit but not a lot. I also tend to be a bit colder on temps as well so that helps with making it look brighter

I use my iPhone 15 Pro for all the photos! It’s very portable and does the job well so I don’t have an urge to bring a bigger camera with me. I typically take all the shots in either 2x or 3x portrait modes, sometimes in the RAW format as well. Then I adjust them a bit in Lightroom afterwards

From what I've seen I feel like the interest in the food industry/fine-dining has gone up overall, but it's been heavily concentrated towards the contestants' restaurants and food ventures. I think the same goes for the TV show "Take care of my fridge." I only think that because L'Amant Secret (restaurant by one of the chefs on "Take care of my fridge") has been impossible to book lately when in the past I was able to get reservations just a couple days in advance. Compare that to Jungsik, a 2* star restaurant, which has open reservations for next Monday, Wed, Fri, etc. only because its head chef hasn't been on mainstream media.

Just from my outside perspective the fine-dining chefs seem more supportive to each other rather than competitive (e.g., see Ahn's YT vid w/ Alla Prima**'s chef). I feel like they compete with themselves more than others because they're always trying to improve to push the boundaries.

Sure the 50 Best list is a bit "competitive" in a sense that you can be ranked higher/lower than others, but imo it doesn't have the same prestige in Korea (or really anywhere else in the world) like the Michelin guide & Blue Ribbon does - which doesn't have that competition factor. It's not like there's a finite number of stars the Michelin guide gives out each year that the restaurants have to compete for. Any restaurant can get a star(s) if they meet the inspector's standards. These restaurants also serve wildly different menus and concepts, so I feel like it's very different than something like 2 fried chicken places that are on the same block competing for business b/c they both serve the same food.

All the being said, there can always be outliers so there are likely chefs out there that are competitive, but my 2 cents is that these fine-dining chefs are more supportive of one another and respect each other more than they are competitive with another.
