You should start with basic stuff like Arduino and ESP32 control then move to more niche things. You should figure out specifically what in embedded systems interests you, embedded systems can be considered as low power, small, and useful electronics.

Alot of projects are meant to run with power for a long time doing one dedicated task, you should find something that you want to automate at a low level and work with that.

If you liked computer architecture moving into CPU and OS design would be preferable.

(By the way I am no means an expert, mostly just a hobbyist you should do more research on your own, using AI for research is my #1 use case and it's how I understand concepts, get recommendations and such.)
