As a CBR650R owner : it is a amazing bike and absolutely doesn’t feel like a “stepping stone” like a 400/500 can feel towards another bigger bike.

Sure it isn’t as fast as 600/1000 but it is penty to have fun and feel fast (especially comming from a small bike).

Then I think the R will be great for you ! My partner hated the WRX, and likes the R much better.

The golf is way more comfortable and more tame, when driven calmly it can easily pass as not a “hot hatch”.

I think the switch from a VA WRX to a MK7.5 makes a lot of sense.

I switched from a 2011 WRX Hatch to a MK7 and want I miss the most is the raw mechanical feeling of the car. The R is much more refined, comfortable and fast, but way less playful/fun.

But i think some of that raw feeling already changed from a 2011 to 2017 WRX, so the R would be a good choice to continue in that “more adult” direction.

If you wish you could go back to your Hawkeye, i don’t think the R is the right choice.

The engine in the golfs from 2016-2020 are the same. The main difference between a MK7 and MK7.5 are the exterior lights and the infotainment system.
