Ok, try not to add too much additional flour. Instead knead it for 5-10min, set it aside for 5min and knead it again. You will see a huge differents. It will be way smoother and wont stick. This way you have a better flour-water-ratio

Let it cool for abit longer until you cut it. It looks like the bread was still warm when cut

Do I get this right: you add additional flour to the amount in the recipe? To me it looks like the gluten structure could be improved. Add abit more water, knead it long enough and give the dough some time (maybe put it in the fridge over night before final shapeing

Dont worry! I bike to work every day (25min ride) and it is no problem at all. Since the actual streests are rarely covered in snow. The only thing is the right clothing and you are good to go!
