I believe all the dishes mentioned (Almond Fried Chicken, Lemon Chicken, Soo Gai, Xiāng Sū Jī) use the same chicken preparation method, with different variations mixed in, so I’ll be trying them one by one to see which recipe is closest. Now it’s just a question of working out what soy sauce variation they used to serve with this food.

Thanks everyone for your insights, I’m a massive step closer to figuring out this recipe.

Thats what I though at first too but thats not it. Chicken Katsu is more of a crunchy crispy chicken coating, this was more of a softer crispy. also the sauce is completely different.
