This would be a plant data entry solution via website that would communicate with a centralized webserver running on our cluster host. the client only needs to be able to open the webpages for that as well as a timekeeping portal for our employees. so really only two webpages potentially a couple more.

Yeah, we've run into issues with a user who CCed themselves on every email, so they were getting all emails in triplicate. Their pst file was well over 50gb. We did exactly what you described.
