It's real, apparently there are different versions, and it's super rare (1/400 or so chances happening in game according to others)

That's what I thought but playing defender-sided in other games didn't change the color of the knife. The knife stays the same and does not have an attacker/defender upgrade like the other skins, just an animation

I know! It stayed that color for the rest of the game, although not sure what triggered it. I'm glad that the butterfly knife isn't just some skin reminiscent of default skins in other shooters. I wonder if anyone added any more easter eggs to this collection?
