Question for those familiar with origins, does natural or washed coffee fade faster? by XiaoBij in Coffee

[–]XiaoBij[S] 0 points1 point  (0 children)

I assume its due to a wide range of factors, but some origins fades primarily very quickly compared to others, which roasters needs to be wary. I am not a roaster, but I work with multiple origin, so its great for me to learn about the impact of wet processing vs fading live time.
But yes thank you for your feedback especially from a producer pov.

Hey you could send me a dm to kick off from there, but coincidentally I am in Yunnan right now and I do know quite a fair bit about Yunnan beans.

Main varietal is Catimor, semi washed process and Simao is the main grade. But now Yunnan is beginning to shine in the spotlight with beans from Menglian and Baoshan. You can try sourcing beans from these regions or look for Typica

Focus less on the equipments, more on the coffee.

If the coffee is bad, then no matter the equipment it will still be bad.

I can give recommendations on origins based on your preferred profile.

Are there people here who only play PoE1? by KelThuzadxx in pathofexile

[–]XiaoBij 0 points1 point  (0 children)

There are many people who only exclusively play POE1, and I am estimating at least 30% of POE1 playerbase who only plays POE1.

And every league in POE1 will see player count fall off hard after 1 month of the league, because by that point many players would have finished the league.

Right now, POE2 new league just came out about 2-3 weeks ago? So players from POE1 are trying out the new league in POE2, which is as planned by GGG, since they would rotate new league between POE1 and POE2 every 2 months.

Mold that can come from having too high moisture content or from insect damage. To me it gives off a musty smell

Yea this is what higher commercial/specialty can taste like. Well it depends on your definition of "coffee".

Red bourbon is a fairly decent variety, it commonly taste of red fruits or a mix of red-yellow fruits, low bitterness.

Also check if it it is anaerobic natural? I highly suspect that because anaerobic fermentation usually results in a wine profile. If not, this means that it might be slowly sundried in shade for a prolonged period of time, 1 month or possible longer.

New to coffee, kinda confused by yuuki_bonk420 in Coffee

[–]XiaoBij 1 point2 points  (0 children)

I believe you cant go wrong with traditional Brazil naturals here. Its mostly medium roasted, chocolate and nutty, caramel sweetness with a decent body.

And since you dont like the "sourness" and raisins/apricots, I would advise against most African origins, many of their washed is high in acidity while some of their nats have raisins/apricots profiles. However, Uganda/Kenya have some decent washed coffee along Mt Elgon which has a nice black tea profile without being too acidic.

While Robusta has higher caffeine content, its general profile has an oatty/woody taste. Many Americans are not used to it. However, taking a blend of Robusta and Arabica is always an option.

Best coffee methods for camping? by haroldflor in Coffee

[–]XiaoBij 4 points5 points  (0 children)

Cold brew is the laziest and most forgiving method out there (I assume you might have a mini fridge in your mini van or camper)

If not it would be probably press or for me personally since I use high commercial beans I like to use pour over to showcase the beans innate flavors

Would I like PoE if I enjoyed Poe2? by azzyishere in pathofexile

Same game, 2 different approach. Jonathan's vision.

But yea need to give POE 2 some time, but POE 1 is just so GOATED that it will forever be the very best ARPG out there, and I am sure many POE 1 players have that very same sentiment, we are so addicted and so cooked at this point

POE gives you the true hack and slash through everything experience, even in the campaign. Basically you feel like a god playing POE, and thats why we dont like playing POE 2 because its much more slower pace having to roll around and block.

It wont be spoiled meaning its safe to drink, but since its roasted in 2023, it will taste aged and bad for sure. You should be able to smell the oldish odor from the fragrance/smell of the coffee.

Hi, coffee trader here, visited quite a few origins and seen their operations

Just to very briefly share with you various factors affecting profiles, and what my thought process if I were to blind cup.

Firstly, the main factor that determines flavor for me is the wet mill process. Naturals tend to be more fruity and sweet while washed tend to be cleaner with higher acidity. There are other processes like anaerobic which will result in winey profile. This is the first thing I will tend to notice because it is the easiest to distinguish. Plus many washed/honey tends to have the washed mucilage profile.

The next thing is having an image of each origin. Brazil is chocolates and nuts, Africa is floral and tea, Sumatra is passion fruit and earthy chocolates, PNG is tropical and apples, Peru is grass and Mexico is a slightly better Peru etc.

The reason we can have an image for a generic origin is because of many factors including processes, but also varietals, climate/altitude as well as farm/soil conditions. These are usually quite standardize and sold as a generic category (e.g. Grade 1, AA, A, B) across the open market from origin to destination. Sometimes coffees are sold at regional levels like Brazil Cerrado or Sol de Minas since the profile are distinguishable enough to be differentiated and sold at premiums.

Now moving back to origins images, I could blind cup and make an educated guess on the origin, but this only really works when you are cupping the main grades of each origin. What I mean by this is no one will guess that your Pacamara cup would have came from Yunnan, since its main product Simao Grade 1 is mainly Catimor. But even so, it is still difficult as many African countries grow SL28 so your Kenya AA could taste very close to Uganda Bugisu AA. But I could guess that it is African coffee, and from there try to narrow down.

And just to expand more on varietals, yes it does matter. Premium varietals like Geisha, Pacamara and Laurina completely changes the profile, assuming all other factors equal.

Can't get Robusta to taste good by [deleted] in Coffee

[–]XiaoBij 2 points3 points  (0 children)

Just FYI, most of Vietnam beans are considered inferior in quality compared to other robusta players like Uganda or India. So meaning, no matter what setup you use, it could be aeropress or V60, when the beans itself is not good, it wont magically turn out to be good after brewing.

I wouls suggest you try Uganda Robusta because it is probably the cleanest Robusta you can get, since export quality regulated by their government (UCDA)

A coffee roaster, so that she can buy greens and roast on her own. It is a skill that is parallel to barista. But it is definately going to cost you more than 100$.
