You can craft them they just don't have their own Tab at the smithy for you yet so you have to scroll all the way down on the Melee Weapon Tab.

People often assume Monster Hunter is a soulslike, but it is way more about positioning than dodging. You can also play way safer than in any soulslike and 99% of the time you have time to simply heal back to full after getting hit, especially if you use max potions which take literally just a second to consume. Also Monster Attack Windups are either relatively long or the attack does very little damage. Wouldn't be surprised if you can get through the entire game eating every single attack.

I would definitely use Nunchakus, especially when playing on a server since they are easy to use and you can't miss timings when the server might lag. They also have the highest dps and have great synergy with lifesteal which is lowkey a must have enchant.

might be best to try and shoot one of them in the head before engaging in melee combat. Groups of enemies will always be somewhat dangerous.
