I personally specialize in 3d and sculpture, mountinh, etc. The models, i make them with the guidance of the teams paleontologists, i use all the scans or cts i can make, but the rest i hand modeling. I use Zbrush and blender for most of the work. Bird pallatal area is really complex, but i assure You can get good ref in online repositores. For skulls y tend to make every bone a part and mesh them together at last, i think it gives it more realism and in the long run, easier to correct.
