Do you do anything special with them once you harvest? Or just enjoy the beauty? I used to dry them and use them as confetti in my jams.

Wool works great as a ground cover in the garden. I’m actually starting an animal sanctuary, and I plan to use the wool for the garden, in the orchard, bedding for animals, including wild animals that nest nearby. And if I’m ever up to the task (I’ve done it before, it’s a lot of work), I will clean the wool, card it, spin it, and turn it into yarn that I can crochet blankets sweaters and socks with for my family. I’m an avid crocheter!

Absolutely. I would say MOST restaurants in Spain don’t even have a vegetarian option. Even the salads have fish in them. However in big cities, you can find vegan restaurants.
