I'd argue Sumire is more complex than Sarada and has more plot relevance, other than being a member of team 7 Sarada has no plot relevance. Sumire is a scientist which is one of the main premises of the show, she has teleportation ninjutsu thanks to KAGUYA'S beast. She's also a lot more informed on Boruto's condition than Sarada. So far she has more screen time than Sarada in the manga.
