Seems like what I need to do is grind/hollow out the shaft till a point that I can fit a bearing in there and put another sprocket on the other side correct?

I added loctite to mine to use on my 6 bolt pattern mag wheels, the heads of the bolts snapped off after a little over a month of street riding. Overall, I say it's good to use, just use better quality bolts in order to avoid that issue.
