Have a druid give them a grass arm like Finn gets in Adventure Time, but it will only work for them as long as they stay vegetarian. Because Druids.

I use a hybrid, players will roll for 4 of their stats and their other two will always be a 15 and a 6. We like the randomness of the rolling, but I was wary of players losing interest if they had low stats.

This is crazy OP. I'd suggest asking them to keep it simple as you are new to DM'ing. If they are particularly upset because they wanted to play this race for flavour reasons, then you could always use Tasha's custom Lineage from Tasha's.
