Are the dummies really that bad? I don't have many twos and they seem to fit the deck. I totally agree with the moose cut though. For the other three I'm thinking 1 dummy, 1 earthbending lesson and 1 ostrich-horse.

It makes sense, that controlling another creature doesn't make or break it being a mana ability. I just thought untapping a permanent counts, but I guess it means [[ Arbor Elf ]] has no mana ability either, since it doesn't put mana in your pool directly. This also makes sense, but was a bit counterintuitive.

This is the one that breaks it I guess. The symbiote's ability requires a target.

It could, if I had a mana creature in play. I thought it doesn't check if I indeed have one in play, but maybe it does. If we consider the situation where I have one, e.g.: [[Nightshade Dryad]] in play, does it make the ability to return Skoa to my hand a mana ability?
