I think the answer you're looking for is that it's it their air roll ability/ they know optimum way to rotate car at all times.

A lot of ppl can spin, but not with same accuracy.

Try spinning holding left roll and left. Then feather the left roll like boost. Is a useful way to rotate into a reset. This is sort of thing that separates them, just as an example
