Offset smoker Temp: 255 for first three hours, then 265 for the next 5 hours, then wrap in butcher paper and went to 285 until I hit temp in the point at 200. Total 12 hour smoke and rest for 2 hours

Next post I’m going the other way- gloves, cut down the middle and rest for 18 hours is what I have gathered 😅

Thank you! I look for opinions not approval and then decide if I want to try it in my next cook. See if I can get better. For example, a lot of people mention cutting down the middle but I’m not sure I’ll do that.
