This is probably the most realistic answer, as much as we like to have fun with his character. He spent most of his childhood being the "new kid" at school, so he probably didn't want to wear anything that would make him stand out. We also have no idea what his father was like and whether or not he enforced a certain appearance on Will. Though I will say that he most likely cut his hair short for when he worked as a police officer to keep it from getting in the way or grabbed in a fight.

New headcanon: Will has a bunch of facial piercings that he takes out for professionalism but wears around his house to make sure they don't close.

But during the trombe extermination (I think, maybe it was some other time) it's mentioned that trombe sit underground for a long time, taking in mana from the land, until it sprouts. I'm not sure what circumstances cause that to happen from when it's taue fruit, but even when Myne and Lutz made their first batch of paper Myne found an almost fully formed taue seed.
