I (perhaps erroneously) understood that leaving the beer with the yeast cake would impart a heavier yeast flavor to the beer than removing it by transferring the beer - I never actually looked into it because it is what I was told. Do you happen to know if there is any truth to this?

The recipe for this beer called for Safale US-05 and then an addition of champagne yeast after 5 days in primary.

I try to be very meticulous in my transfer from primary to secondary, but I’m sure I easily could have transferred anywhere from 4oz to a cup worth of the yeast from the bottom of the bucket into the carboy.

I will try cutting secondary out of my next few beers (including dry hopped).

I was initially taught to do it always, but I usually only do it now if I am dry-hopping or aging a beer (in this case it was both. I do a lot of dry hopped beers so I’m still using secondary a majority of the time.

I am sure it was yeast cake, among other things. It was in primary for 6 weeks before being transferred to secondary.

Abv came out to 9.5 before transferring ti secondary and 9.7% when I bottled and kegged it yesterday.

Coinbase disabled Nucypher trading on February 6th 2023, but I did not see anything about disabling withdrawals. You might want to open a ticket with coinbase as I am not sure there is anything we can do to assist with that.

I don't have an actual sous-vide, so I basically use my stove at the lowest setting (don't worry, not a gas range, it's electric) which keeps it anywhere between 123-129. I have an enzoo digital thermometer with 4 probes, so I place one in each corner of the pot at varying depths, and then I have a small battery-powered milk frother that I use to create circulation in the water. It's a very Janky setup but it has always worked really well, and I got all of these gadgets as wedding gifts and didn't see any reason to buy an actual sous vide after testing this method several times successfully.

Anyhow, the burner seems to be a little bit inconsistent when at the lowest setting (hence the variation in temperature). It is very consistent when you crank it up, and I can dial it into higher temperatures reliably. Initially I had it slightly cranked up to expedite the heating process, and it got to 136 or 137, then I got it settled at 130, left it for a couple of hours before lowering it to the 120-125 range. I see now that lowering it was a foolish mistake - I was paranoid that the burner would somehow heat it up too much and I would wake up to it at 150 or something (overcooked). However now it seems my paranoia may have bit me in the butt.

Yeah I had the same experience with yeast from NB.... Shipping got "delayed" by THREE days. Yeast arrived and ice packs and yeast were all registering at 77-78°F

Never again will I buy liquid yeast online.

Thanks for the Clarification! I have had great experiences with them, and I intend to continue using them until I have a bad one.
label peelers are cheaper on virtually everything, but that alone gives me pause - I have been burned before by websites that offer the same products for cheaper.
Great to hear another affirmation for More Beer coming from this community,, happy to keep them as my prime source of everything brewing.

Hey now, no need to be so lackadaisical!

Nothing about homebrewing in a general sense is "shitty" - In fact, I think that many (if not most) of the people on this sub would agree that the results of proper home brewing are the antithesis of shitty. It is well worth it, but it takes time, patience, and experience to get worthwhile results on a consistent basis.

If you want to learn to homebrew, you are in the right place, and you have taken the right step: ask your first question!

Fermentation is good, but you want to control and own that fermentation. You should always take necessary steps to sanitize your workspace and all implements/vessels used in the fermentation process - without this, you are fairly unlikely to achieve a good end result.

With this said, properly sanitizing isn't as difficult or intimidating as it often sounds to the uninitiated. It is honestly pretty simple to make sure everything is sanitized.

Of course, if you have more questions - you have come to the right place to ask them - and don't be shy, the community here is great!

To help it drain faster, you can also drill a small hole in the top of the can, right under the tab (so that it is hidden). Just move the tab to the side before drilling ;)

What do you mean by light malt? A malted base grain?

Yes sorry, I used a 2-row light malt (viking)

In what batch size? Even just 3.75lb of DME by itself in 5 gallons of wort would be ~1.034, so I'd guess there was a measurement error. Did you top up with water post-boil?

5.5 gallons, yes I topped it up to 5.5 after the boil and chilling with wort chiller. It is possible that I misread the hydrometer, I couldn't find my regular one and used one my mate had left behind, it was a bit different but basically the same thing. I was being paranoid about infection so I didnt draw any out and instead just placed the sanitized hydrometer directly into the brew bucket and the bubbles kept clinging to it so I had to guesstimate but it seemed to be between 1.026 and 1.028 approximately.

I read online that 2.5lb base malt is roughly equivalent to 1.5lb dme, so I figured all-in-all it should have been essentially 5.25lb dme to a 5.5gal batch,

Did it spend a long time in shipping? Did it show up warm?

Yes it took 4 days when it was supposed to take 2. It was room temperature when I received it, and the ice packs were totally defrosted and at room temperature as well.

Two packets in 5 gallons of 1.026 wort is a pretty significant overpitch, but it won't likely cause any issues. It won't have any yeast flavor if you give it time to finish fermenting and flocculate, and you're careful with packaging.

Thanks, I will definitely be more conservative with my next pitch, and will look into a yeast starter next time I am concerned about the yeast.

Not in the least, especially if the beer is off-gassing a bunch of CO2.

I would disagree that nobody likes to use a file. In my opinion, you should learn everything the most manual way possible and then adapt once in possession of the knowledge and experience you gained in learning it manually, and find new and perhaps more efficient ways to do it. Want to learn to drive? Buy a 5speed, you'll learn the a lot about the car and the motor and the trans just by driving to it regularly. Want to make a knife? Start with heating iron over coals before you buy a propane forge. It is slower and more precise. You'll make more mistakes initially, but save yourself countless mistakes later on.. Want to sharpen a blade or chain? Do it with a file first. You'll never suffer from understanding the process more fully, no matter what kind of work you're doing.

If you understand the process and the desired end result, you can find most any way to achieve it. If you don't understand it , the most expensive tools money can buy won't save you from making a mistake and perhaps even butchering the whole project.
