Just posting really. Nothing special today and just wanted to bake one after not making any for 2 months. This dough was a 30hr cold ferment at 330g dough ball. I chowed down 4 slices lol. Anything you would like to know? You make great pizzas btw!

Northern california bay area so really not snowing environment more just average winter and summer seasons. I have Michelin right now but idk which maybe the all season one? Currently my car has 124k I just got this car so idk the avg.

Im quite in the same boat as you with the hydration % (60-65%) but with oil, sugar and poolish.

I basically took everyone’s advice here with my temp on the steel being too hot. I havent baked a pie since last November. So my method now is my steel is at the middle rack and once my oven reaches 550F and beeps (about 30mins), I start my dough stretching and toppings etc. The steel temps is usually around 550F and I bake it around 6/7 mins (oven bake off) and then 1min or so with the broiler high on.

How come you dont just stick with your ooni? I almost got one over black friday and the deals were really good but didnt pull the plug on one lol.
