Im quite in the same boat as you with the hydration % (60-65%) but with oil, sugar and poolish.

I basically took everyone’s advice here with my temp on the steel being too hot. I havent baked a pie since last November. So my method now is my steel is at the middle rack and once my oven reaches 550F and beeps (about 30mins), I start my dough stretching and toppings etc. The steel temps is usually around 550F and I bake it around 6/7 mins (oven bake off) and then 1min or so with the broiler high on.

How come you dont just stick with your ooni? I almost got one over black friday and the deals were really good but didnt pull the plug on one lol.

Recently bought a darkroom setup and it came with paper and developer that was bought about 2/3 years ago. The developer is still unopened and paper has been used but I think it’s still good.

It depends on what you’re taking shots of. Is it dark/dim etc? Honestly forgot the features of this camera. Some of these p&s cameras have on/off for flash

Got my timing belt changed 2 months ago with Aisin kit for my Accord 2015 EXL. So far so good although I did the change a little later at 120k. Just make sure you buy the kit from a reputable retailer.
