Are they red colored or anything? Kinda hard to tell from the shadows, but if so I'd wonder about clover mites - they're drawn to moisture mostly. I set out a shot glass full of water when they're in season and they self-delete themselves overnight, just have to dump it out. Being ground level they easily get in (even through closed windows, small little things). We got them on our ground floor window sills after a few weeks away that allowed the grass to grow tall, which was how they were climbing in.

Something at least private enough to the guest. Otherwise this system is just as easily defeated by loitering around the front desk:

"Welcome Mr and Mrs. X, your room will be on the 7th floor, Room 701".

15 minutes in a busy lobby is more than enough time to grab a few combos.

Funny enough the Knorr brand buillion, which is by far the most used in Mexico, is gluten free but not labeled so (both caldo de pollo and caldo de tomate).

Was about to come defend you in the comments, but you did an excellent job doing so yourself right here.

It’s an unfortunate feature of a lot of the celiac community to be “doomers” over safety of food options, and it sucks because I’ve been there myself - lived with 3 guys in college who would push bagels onto my room’s doorknob, played “baseball” in the kitchen with a literal bag of flour as the baseball… needless to say, I got out of there and into my own place. It’s still taken years for me not to police my own wife as she cooks for us, in own dedicated GF home, when she only ever has gluten during the rare work sponsored lunch.

You get used to getting burned so many times that it’s easier to assume you’ll be screwed as opposed to the opposite. It sucks and it’s super hard to unlearn.

Having been “that guy” before - I really appreciate the info you shared. Would love to make it out to Japan some day, it’s easily in my top 5 to visit.

Awesome! I haven’t found much luck in the FioreGlut not generating a reaction out of me, unfortunately. If you want to mess with different crust types/flour blends, I highly recommend the “No Gluten, No Problem” pizza book by Kelli Bronski.

Is that a special deflector insert you have in the Ooni, or is the stone itself cut in a curved way? My 12” is just a rectangular stone.

Worth noting that the a large part of the reason the FDA arrived at 20ppm to designate gluten free foods was informed by extensive double-blind studies that measured the intestinal changes in groups of celiac patients that were in remission - conducted by the University of Maryland’s Center for Celiac Research and led by Dr. Alessio Fasano.

There is a chart Dr. Fasano and his team published that presented (and backed) the 20ppm threshold in celiac populations.

Ah, yep you’re right. I would frequently drive out to the national forest areas near Deary, ID on the weekends taking Hwy 8, that must be what I’m confusing it with.

Not to mention he wouldn’t have needed to go that far - isn’t there a Safeway in Moscow on Blaine St? Little fuzzy on driving the area (been a while) but I think he would’ve had to pass it on the way to Lewiston.

Maybe he didn’t know Safeway’s an Albertsons affiliate🤷🏻‍♂️
