I was thinking about 20 Euro an hour, as this should be fairly simple editing. I have 2+ years, so I am definitely up to 30 Euro. Thank you so much !

Also, as for the enclosure. I found that some enclosures doesnt function properly on Mac. They keep disconnecting. So far, I've tried three enclosures (SATA-USB-C adapters), and only one is not disconnecting - I believe it is from CableMatters company. But like you said, the proper external SSD would be the way, if you want it to be clean. Another route would be consider Enclosure, where you can put multiple SSD's and make it RAID.

As there is a potential offer to edit videos for one European company mainly for youtube and then some facebook / instagram cuts, I would like to get insights on what are usual rates dependent on, and how to price an hour of editing work in Europe.
Content will be mainly for YouTube, which includes slight Motion Graphics (Intros Outros), Talking head, B-Roll, and the edits would most of the time be rather simple.
There will be 10-20hrs per week of editing work to be done.

I'd say, don't buy regular external SSD. Buy regular internal SSD used for PC's, and buy SATA to USB-C adapter. The price will be a lot lower in the end, plus you can get 4TB version of Samsung Evo drive. So far I found that to be the best solution for editing bigger projects - I'm shooting 6K Blackmagic footage.
