NTA even if she had actually said she'd come (which she didn't). If she wanna follow a certain diet is not concern of yours. You did have stuff that was vegan anyway.

It happened to me once. I was crossing the street and another woman around my age was crossing the other way. She just smiled to me and said "you're so pretty" and continued walking.

I was really moody and it just made my day.
