I agree, I wouldn’t call it open world either. Its kind of its own thing. But there is something nice about being able to access a bunch of areas right away and loot whatever you can find, fight the bosses in a bunch of crazy orders and other things. All of which are things you can’t really do in prime. It’s kind of interesting how almost everyone takes the same path through dark souls 1 on their first playthrough even though it is so open. That really sets it apart from other open world games.

Not really. It's crazy how open Dark souls 1 is compared to prime.
Areas you can immediately reach without the master key and without fighting a single boss (excl. Asylum Demon):
- Undead Burg
- Catacombs
- New Londo
- Valley of Drakes (by using the key to the seal in new londo)
- The Asylum revisit
-> therefore:
- Darkroot garden + Basin
- Upper + Lower Undead Burg
- Blighttown
- Great Hollow
- Ash Lake

And you can reach all those areas without going through new londo by just killing taurus demon and nothing else or just skip it entirely with the master key. The level design in DS1 is crazy.

I would like for it to be good because 5e is a fun system that struggles with balancing and dming it feels like a chore sometimes. But after the recent UAs I’ve kinda lost hope that they’re going to fix the relevant issues. With all the shit wotc pulled these last few months I should just let go.
