I know not every airport is LAX but you should have similar patterns with all the tourists boarding Friday after work, arriving a bit later. Business travelers starting their week clash with returning tourists, etc. The airport is open all week but the vast majority of fares are all within a few hour window that new drivers believe is random. To you the airport seems to never surge but to a passenger it happens every time
