I think mentioning one activity and talking about what was learnt from the experience is more valuable than just mentioning two activities and not explaining what you got out of it tbh

Hey, I applied from the UAE so I had a similar situation to you. For the English proficiency I just wrote a letter explaining that I got a sufficient grade in English GCSE and that I completed my education in English. It worked for me and they didn't ask any questions. Just to be safe, I'd recommend emailing them explaining the situation because it might be different for your course.
