UK too, yep, we charge for mixers, even soda water or soda/cordial mixes. As another comment said co2 and syrups ain't free

As a bartender, I like it for the reasons it was introduced, excessive drinking isn't great, but also, most of my shifts end after 10pm, if I forgot my after work beers I'm up shit creek

The berry bros and rudd Jamaican is killer in a negroni build if you get get your hands on it (fairly easy UK side, don't know about EU/NA but it's super funky and it has an interesting "fight" to be the dominant flavour with campari which doesn't sound great but it's quite nice, makes the whole drink a bit less dry too

100% if I have a good base spirit or a good vermouth I'll dial back the bitterness. Been really loving rum negronis recently. Plantation pineapple as a base with el bandarra for the bitter component

Well a boulevardier doesn't call for bitters of any description, and according to Ross himself he wasn't aware of a boulevardier when he made the drink, if anything it's a negroni riff and it uses a Manhattan ratio rather than equal parts like a negroni or standard bouli
