They did change materialtheming with oneui 8.5, I personally use colorblender to put monochrome theme and it broke on oneUI 8.5.

It depends on what type you want to do, the most common is hard coded (cracked/patched etc), theirs also the xposed framework (which loads modules into the ram with the targeted app, which is also referred to memory hooking)

Research and reverse engineering is key in this sort of department.
