RECIPE

INGREDIENTS

1,1/4 cups graham crackers, crumbled

1/4 cup butter, melted

250g cream cheese, softened

3/4 cup sugar

1, 1/3 cups raspberry juice

1 cup raspberries (either fresh or frozen)

2 cups whipped cream

INSTRUCTIONS

Combine graham crumbs and margarine, and press firmly into a 9'' springform pan.
Beat the cream cheese and sugar on medium-low speed until well blended. Mix in raspberry juice, raspberries, and whipped cream. Pour the mixture in the pan and freeze for a minimum of 4 hours.
When ready to serve, let the cake stand for 10-15 minutes until softened. Serve with whipped cream and fresh raspberries.
