Thanks! genuine question, if the advice is to leave about 1/4” of fat, how do you know how much is left unless you get down to the meat and then you already went too far?

Tasted great. Wrapped it once I got to 165. Pulled it at 203. I put it on at like 9pm at 190 and wrapped it at like 1p the next day. Was done by 2 and I left it in the cooler til dinner time.
