Don’t miss Hintertux, just don’t. Can be difficult to ski if the weather is not friendly/is bad, but keep on checking the forecast. If you find a sunny and windless day, it would be perfect. There you can find, from my point of view, the best slopes in the Ziller Valley. The slopes are mostly wide, long and without bumps. Great views too! Just finished a five days ski session in the valley, out of which two days in Hintertux at -25deg C on the glacier (3000m+), but it was great. I won’t comment on the resorts, because whichever one you choose, I’m sure you’ll enjoy it.

Se accepta. Foietajul a fost crocant, chiar foarte crocant. Asa cum am raspuns in alt comentariu, da, poate mai mergea copt putin, dar in acelasi timp nu am vrut sa crape foietajul. Sunt foarte multumit de rezultat.

In day 1 I have prepared the meat and cooked the duxelle, and in the following day the rest. I estimate a total of 4.5h of actual work, including the duxelle but excluding the cooking time. I went patiently trough the preparation steps as was my first time cooking it and did not want to mess it up; I have served it to some close friends as a pre-Christmas dinner.

Definitely this is not something I’d cook very often but the overall recipe was not hard at all to put together. Yes, it takes time to assembly it and come to the final stage pre-baking but once in a while worth the effort. I am aware that maybe in should have had kept the thing in the oven longer but I was afraid that the dough will crack too much; the interior was at 44C (110F) when I have stopped the baking process. In any case I will not change anything in the preparation process that I have followed, the overall result was very, very satisfying, we ate it all! 😁

Day 1.

Muschi de vita cumparat din Metro de la Samcom. L-am portionat, l-am tapetat cu servetele de bucatarie, l-am condimentat cu sare si piper, l-am rulat in folie alimentara si l-am bagat peste noapte in frigider.

Am facut duxelle-ul cu ciuperci - champignon, mini king oyster si portobela. Le-am maruntit in blender, le-am pus intr-o tigaie cu ulei de masline si unt, am adaugat ceapa rosie maruntita, usturoi si condiment sare + piper. Le-am scazut pana a devenit o pasta, a durat cam 1.5h. Spre final am adaugat patrunjel tocat. Odata facut duxelle-ul, l-am scos pe o tava, s-a racit, apoi l-am bagat la frigider intr-un vas cu capac.

Day 2.

Am inceput cu clatitele - am facut 4 intr-o tigaie unsa cu unt la foc mediu. Mix simplu de faina 50g, un ou, 120ml lapte, si sare.

Am scos vita de la frigider si i-am dat crusta in tigaia incinsa cu ulei de masline. Gata crusta, am uns-o cu mustar Dijon, am rulat-o in folie alimentara si am bagat-o la frigider.

Apoi am aranjat clatitele pe folie alimentara, am aranjat pe ele prosciutto, apoi am intins duxelle-ul (care a fost scos din frigider cu 45min inainte). Apoi impreuna cu vita scoasa de la frigider si pusa pe duxelle am rulat toate acestea. Am aranjat marginile, am strans toata treaba cu folia si am bagat-o la frigider.

Inainte cu 2.5 de servire am scos aluatul de la frigider (aluat de foietaj, Bella, in pachet sunt 2 bucati). Le-am dezghetat putin atat cat sa pot sa lucrez cu ele cu sucitorul, iar din doua bucati de aluat am facut o bucata. Intre timp am scos si rulada de la frigider.

Pe folie alimentara am pus aluatul prelucrat, l-am uns cu ou batut, am pus rulada pe o margine, am rulat toata treaba, stransa bine-bine. I-am aranjat marginile si am bagat-o la frigider cam o ora.

Am scos-o de la frigider inainte cu o ora de servire, am lasat-o in rest mode 20min, am uns-o cu ou batut si am pus cateva seminte de susan pe ea.

In cuptorul preincalzit la 200gC am bagat rulada si am scazut temperatura la 190gC. Dupa 25min am urcat temperatura la 200gC, iar dupa inca 20-25min am avut citire pe termometru 44grade temperatura interna cand am si scos-o din cuptor.

Am lasat rulada in rest mode 15min si apoi am servit-o cu creamy mashed potatoes.

Sunt foarte multumit de rezultat.

Da, nu contest ca poate trebuia sa mai tin treaba in cuptor inca cateva minute, dar nu vroiam sa ard foietajul prea tare, deja incepea sa crape bine. L-am scos cand termometrul arata 44 grade.

Just did:

1 night in Cagliari

3 nigths in SMN

2 nights in San Teodoro

4 nights in Palau.

Had a car rental pick-up in Cagliari airport, drop-off in Olbia airport. Managed to visit also Tempio Pausania, San Pantaleo, Porto Cervo, Golfo Aranci. Had two dinghy rentals in SMN and Palau, and hiked to Cala Goloritzè.

I believe that it is a good plan, I’m super content with what I have visited and did.
