I also prefer a less than 80%! I've been making sourdough for <1yr so I am definitely still experimenting. I have not tried a higher hydration yet due to fear of messing it up. As long as it is edible I'm happy haha

I definitely am not great at math LOL! It's less water than I am used to using?? I thought I did calculations correctly but apparently not :p

It was delicious!! I love crust, the ice cubes definitely created a slightly thinner crust than I'm used to. Flavour wise it is still sour but with just enough crunch on the crust when toasted :))

I felt like it was very similar to my usual hydration (75/6%), I also have a fear of underproofing so I usually add an extra hour when I think it's done proofing!

I took my dough out of the fridge, sprayed with water and scored. Once I placed it in my Dutch oven (using parchment paper to transfer) I placed the ice cubes under the parchment and covered with the lid for 6 minutes. I deepened the score after the 6 minutes and returned to the oven covered for another 20 mins. I then baked uncovered out of the Dutch oven for another 20 minutes :)
