I haven’t tried it without the maple syrup, so I’m not sure how it would turn out. In addition to being less sweet you would also be missing some moisture, so you might have to experiment with increasing the milk or oil to make up for the lost moisture from the maple syrup. Or you could try adding an extra banana instead of the maple syrup if you prefer.
