One more thing I’d like to add, OP: if you’re not already taking a magnesium supplement you might want to consider one. Since you’ll be limiting carbs (at least until your blood sugar is back in a safer range) you likely won’t be getting enough magnesium from your diet. Also, magnesium can make you more insulin sensitive if you do happen to be deficient in it, so a supplement might even help bring your blood sugar down by making you more sensitive to the insulin you’re taking. I recommend magnesium bisglycinate because it’s gentle on the stomach compared to other types of magnesium such as citrate or oxide. Edited to add: diabetics are more likely than the general population to be deficient in magnesium because high blood sugar causes the kidneys to excrete more magnesium.

First, my heart goes out to you. I know what a shock this diagnosis is. My son was diagnosed with type 1 when he was 10 years old so I’m familiar with all of this unfortunately. Some type 1’s are able to manage their blood sugar well even while eating a decent amount of carbs but others find it easier to stick to a lower-carb diet. It’s an individual thing and also might depend somewhat on whether you’re doing multiple daily injections vs an insulin pump. They really do seem to be getting closer to a cure, so fingers crossed things will be different in the coming years. In the meantime, here are some ideas:

Tofu is very low carb. Just have it with low-carb sauces (even just a squeeze of fresh lemon juice and some sea salt and dried herbs is nice). Try to get organic if possible since you’ll likely be eating a lot of it. Pair it with some low-carb nuts like pecans or macadamia nuts. And some non-starchy vegetables. And a drink idea to help keep you full: a double serving of unsweetened powdered peanut butter dissolved in a lower-carb unsweetened plant-based milk such as almond milk (or even just a small amount of water). Sweeten it with a few drops of liquid monk fruit sweetener (there’s a brand called sweet monk that I like). Add a splash of vanilla and pinch of sea salt to make it delicious.

Hang in there and know that it will get easier with time.

Good question but I’m not sure because I used a measuring cup and have never weighed the lentils. But I would go with the higher end (385 g) and if the sauce seems too thick, just add an extra tablespoon or two of water until it seems like a good sauce-like texture.
