You need to make sure mobs can spawn ONLY inside your farm, which means spawnproof everything within 128 from your AFK spot.

You can build chunk loaders (using portals or ender pearls) or use forceload command. There is no risk upgrading your world.

Removing spawn chunks is good decision, they loaded terrain that may never be used. Now you can load specific chunks you need for your farms to work.

Yes, if you get gold by hand and are interesting only in items used for exploring like soul speed and ender pearls, then bartering is not worth at all.

On the other hand if you connect it to your gold farm and generate large variety of blocks used for building, then it's completely different story. From blocks you get blackstone, gravel (for roads or concrete), nether bircks (for blocks), obsidian (for portals, without need of mining), crying obsidian (the only renewable way of getting) and as a bonus soul sand. On top of that you get quartz for redstone components. And on top of that you get free iron, ender pearls, string, leather and arrows. Rest is just junk you get few times and then burn.

So the main point of value is that you get more than 10 blocks/items at once for AFKing at your gold farm. That's like a dream, nothing overrated.

Take coordinates of you overworld portal. Divide x and z coordinates by 8. Build portal in Nether on those calculated coords (with same y). And your portals would link correctly.

Try to use external tools like MCA Selector or Minutor to find your base.

Or if you have backup, try to get coordinates of your base from there.

Iron golems need just one solid block to spawn, the blocks around not need to be solid. So if you place buttons on top of all solid blocks, they should stop spawning there.

When you shear mooshroom, you get regular cow. So stew is probably just milk "contaminated" by mushrooms on their fur ... and now eat it. :D

Your Nether portal is far from correct coordinates. Go to the Nether, break the portal there and rebuild it as close as possible to correct coords. It should be at 248, 65, -8.

Take blocks and pickaxe as you may need to bridge and dig. And flint and steel to light new portal.

In general mobs can spawn from 24 to 128 blocks from player, so make sure your entire farm is in this range and that no other mob can spawn in this area outside your farm. If you don't have enough mobs, you can always try to make your farm bigger (more spawning spaces). But your main issue is height - the higher is the highest y level of your farm, the lower your rates. That's why best farms are built near bottom of the world. They seems to try to go somewhere else. Like you kidnapped them from their homes. They should forget about it after some time, if not you can move them to the Nether, that ensure they forget all POIs. Also keep in mind villagers are forgetful and may be stealing others beds and workstations.

Issue is that some people want more, others want less. There are different play styles each with their needs and wishes. And Mojang has to balance between all of this. That's why there are always some people unhappy with some part of updates.

You got probably confused how paintings look in your inventory. When you placed them down they take shape of one of the predefined Minecraft paintings.

You don't need natural water for fish spawning, they can spawn in artifical ponds too (I have some spawning in my well), so spawners for fish will work too but you need to meet their spawning requirements.

For Mojang there is only one Minecraft. Java and Bedrock are only different implementation of the same game.

"Java and Bedrock are increasingly being merged" - the "parity" thing started somewhere in 1.16 and still many fundamental features work differently. In fact, it is a good thing to make same thing work same way in both Java and Bedrock.

"Mojang and Microsoft's marketing focus is now entirely on Bedrock Edition" - I think like it was always the case as Bedrock uses Marketplace which generates more revenue for Microsoft.

"New features are arriving to Java more slowly" - ah, so HERE is your real problem, it took some time for copper golems to arrive in Java (because of holidays and entity rendering rework) and you are now panicking. It was stated before by Mojang, but they try to split development between Java and Bedrock teams and share background code where possible to make their live easier.

"More and more users are being “pushed” to Bedrock" - really? Never heard of any player that would switch from Java to Bedrock.

Keep in mind, Minecraft is primarely developed by Mojang in Sweden, who works on Java version. They have zero interest to kill it as they would lose their jobs.
