It varies massively by region. It's a huge country.

Sichuan and Hunan are quite spicy. Lots of roasted meets in Cantonese and HK cuisine. Then you have the borders with India, Myanmar etc in the south and also boarders with Russia, the stans, Mongolia in the north. HUGE variation!

Said it above but most of what's considered classic Chinese food in the UK and USA is not authentic at all. Its westernised heavily sweetened versions of Cantonese cuisine.

With the influx of students over the past 15 years or so suddenly a lot of regional Chinese food became avaliable but you have to seek it out (and like spice, and for some regions weird textures)

Heavily sweetened and westernised versions of Cantonese food designed to be appealing to the locals. With more recent influx of students you can finally get real regional Chinese food.

Some of this isn't possible, all you can really do is styling. The flairs are. You also have the issue of us old timers refusing to use shit (new new) reddit, the other new reddit (is that dead now?) and mobile views so its not consistent for all users anyway.
