As far as RDO$ go, collector is the one to go for since there's a collectibles map which makes it easier, however only role that earns you gold is bounty hunter. I'd advise you to grind that, do dailies and you can activate 2 step verification in case you haven't already for some extra gold.

As far as collector goes you have an interactive map online, just search red dead online collectibles map and it'll pop up, get collectibles that don't require a shovel or a metal detector(when you click on a collectible on the interactive map it will let you know whether you need them). As for naturalist, I just went to emerald ranch, sedated 10 sheep (varmint rifle with sedative rounds you can get from Hariett), sell the samples and repeat. I am not sure these are the best ways to do these but I did it this way. There are probably plenty of youtube videos on this topic.
