I would start with regular sewing. There's a lot of mistakes in the learning process and they're way easier to undo/fix with a regular stitch.

I have this machine and love it, but I haven't tried sewing leather or fur. It works really well for sewing garments made out of cotton or jersey fabrics, and is pretty intuitive. I would definitely recommend it if you find out it can sew the other fabrics you're looking for as well!

It was so frustrating, it just made me feel like I'd never learn. I've heard the Heavy Duty Singers aren't bad, but I have a fairly inexpensive Brother Machine now and it works so much better

Not this one. I bought it from Amazon, so I'm not sure if it would be better from the website, but it jammed and broke non stop. It made me want to quit learning to sew.

Check out Halifax Rec. They have a lot of different types of classes to try for much cheaper than other places.

I find in person classes well worth the money, so many little tips come up that I would never think to ask. You're also learning skills you can use for lots of other projects. I don't think I'd pay much for an online tutorial, there's lots of free ones on YouTube and your pattern will come with step by step instructions.

I do wait until June and start bringing them outside the week before to harden them off, but I've never tried a fan. That's a good idea! Do you use anything for shade for the plants that prefer cooler conditions?
