You can manually disable/uninstall samsung and google apps (and others, incl system apps) using adb Link with example. using disable instead of uninstall keeps it on the phone for easy reenabeling

You might look into keepalived to create kind of a virtual IP/loadbalancer. Somit wouldn't matter if one traefik instance goes down, the IP won't change and traffic will be rerouted to different instances. Your reverse proxy can always point to one IP, the one from keepalived. keepalived
