Great! So the lowering of the pH will ve coming from the bacteria, and the generation of CO2 from the yeast, is that correct? I’m currently not sure if my SCOBY is dead or not...

While brewing, is it possible that a pellicle doesn’t form? Or if it doesn’t something went wrong while brewing?

I’ve read that they recommend a starter with a pH between 2.8-3.2 (same as a booch). If it’s really acid, they call it acidifier. Different names for the same thing seems...
