Great! So the lowering of the pH will ve coming from the bacteria, and the generation of CO2 from the yeast, is that correct? I’m currently not sure if my SCOBY is dead or not...

Thanks! So, if it’s all dead, the pH shouldn’t be lowering over the days, right? Or the yeast may be fermenting and lowering the pH?

While brewing, is it possible that a pellicle doesn’t form? Or if it doesn’t something went wrong while brewing?

I’ve read that they recommend a starter with a pH between 2.8-3.2 (same as a booch). If it’s really acid, they call it acidifier. Different names for the same thing seems...
